I can't remember when I last had a true birthday party. Boy, how things are different in this family. Not only do you get to pick what's on the menu(dinner and dessert) on your big day but it last all week long. *A birthday week* if you will:)
I chose spaghetti and meatballs with wheat pasta for dinner. Then for dessert Kelly made these lime meltaways. I couldn't stop eating them:/
And what a perfect week it has been. Kai is such a handful these days, he is so much fun, with just the funniest personality.
Yesterday I spent the whole day with my sis/bf in Baton Rouge. Her little guy is just a few months younger than Kai. I know, how lucky are we!?
She is in Aveda hair school and is entering a hair competition. We spend the day gathering and talking about inspiration, and playing with my hair. We also had time to stop by our favorite spot, Red Star, for a quick drink.
Why can't every week be so great?
Mmm..I like to wrap two or three in aluminum foil with some butter(after I've poked some holes in them with a knife) and bake them on 450 degrees for about an hour, depending on the size. You can put them in the microwave too, but I have opinions about microwaves..
Then add some butter, cinnamon, some cream, and you're set. At least I am. You can do so much with sweet potatoes though. Pies, casseroles, be creative! This is my favorite sweet potato crunch recipe.
And the best part: Sweet potatoes are so good for you. They are loaded with vitamin A and fiber.

And the idea behind it is, I suggest one things, and one thing only, that you should do this week. Even if you do nothing else.
In the spirit of New Years right around the corner and all the resolutions that will be made (and broken). Boy am I just the optimist?!

Apple Cider Vinegar
I can't find anything better than Bragg Apple Cider Vinegar. What ever kind you decide to try make sure it has "the mother." This simply means that it's a "live" food.
Apple Cider Vinegar can be used for SO many things.
I use this recipe as a face wash pretty much. I just put it on a cotton ball and swipe over entire face:) I don't wear much makeup so if you do you may want to use it more as an after tonic. Figure out what works for you and make it a beauty staple!
But wait that's not all! Apple Cider vinegar can aid in weight loss or a body cleanse. The options are limitless. And to top it all off, this stuff is so inexpensive.
So my Weekly Reminder is this:
Get some Apple Cider Vinegar. Buy a bottle for your bathroom and your kitchen if you must.
At least try it once. What could it hurt??

After a day like yesterday, I had to start this one on a high note. So I put in some Ms. Ella Fitzgerald doing it Christmas style and watched this.
He just couldn't believe his eyes at first!
We celebrated Kai's first birthday this weekend. It's just too cliche' to even say, "I can't believe it's been a year!!" He's so mischievous. Notice the sugar coma he falls into during the last 40 seconds.
I was so pleased with the turnout. It was cowboy themed. Claire and I made the paper chains out of old magazines. We had these quesadillas, corn on the cob, and sloppy joes. I was going for a southwest feel. We even had a Roy Rogers dvd on in the background!
The cupcake recipe can be found here. I used this icing recipe though. It's whipped cream cheese icing! The cookies were probably my favorite though. I couldn't get enough of them!
Everyone dressed in their best cowboy gear.
Kai loved all his new toys. Especially when mom played the harmonica for him!
And his new boots!! J and I found these at a local thrift store a few months ago. He's just the perfect lil' cowboy:)
The day ended with ANOTHER birthday celebration. Uncle Jer turned the big 24. What a day!:)
